Could I run these units with other Legacy locomotives such as GP35's? Or with MTH locomotives pushing while I use my Legacy remote to operate the cabbage?

Are you aware that the "cabbage" is really a dummy unit, representing and Amtrak "dummy control cab" for push-pull passenger trains? The real cabbage does NOT have any engine nor power in it.
I'm aware. I'm asking if I could run with something other than an another F40 or something other than a Legacy locomotive.

I wouldn't see why not.
I don't think they work the same as it would with the powered F40's where the front unit's horn turns off and the dummy's turns on when switching directions, being that there wouldn't be a pair switch on the powered unit. Although if you set them both to the same engine number, it would probably play the dummy unit's horn when in reverse but still have the powered unit's playing along with it, assuming you use the pair switch on the cabbage. That's using Legacy, though. And it would definitely work controlling the units separately, whether it's alongside MTH or Lionel. That's just how I assume it would behave...
