I brought home a engine from jacks to try and fix. it's taking off as soon as the speed it dialed up.
I try tried to add it to my home remote that goes back & forth to the big layout at jacks.
No engine to add and the thing locks up. It finally dawns on me that the engine is already in the remote and sure enough it is. Starts right up but still takes off. I deal with that later on but my question is.
Why didn't I get the message "engine already in remote" ? yep version 5.

I just attempted to replicate your results and could not. I attempted to add an engine that was already in my remote and I received the message "Engine in Remote", just as expected.
The layout has 3 TIUs, all in Super TIU mode. The remote contains DCS 5.0, latest production version, and the TIU has DCS 5.0, latest beta version (#2). FYI, there is no DCS 5.0 beta software for the remote.
Did you attempt the add of the already added engine more than once after the remote locked up?
Nope just tried it once, 4 tiu in super . I'm going to try it again shortly and also try deleting tiu. Back shortly.
Tried adding an existing again and the same result.... Looking for engine and finally I gave up. Tried putting the tiu in normal and super mode. I didn't get the engine already in remote message.

Try another engine. If you get the same result, try tethering the remote to eliminate loose transceiver issues.
I finally got the Engine already in the remote message but only if working with a single tiu. I was trying before with 4 tiu in super . (all added to the remote but only had tiu 1 here at the house.)

Big mistake!
You should never have a TIU in the remote that isn't present on the layout. Historically, it's always caused DCS to experience hang-ups and timeouts.
