I used the  4x8 pink stuff found at any local hardware store. Most complain that it is not a sound deadoner and doesn't work well but I am more than satisfied with the reduction in noise. The difference vs fastrack directly laid on plywood is HUGE.

 

As far as thickness thats up to you, I stopped short at a mere 1/2" if I were to do it again I'd go thicker, 1" or 2" because its easy to carve waterways or whatever into.

 

I hot glued it to the OSB plywood I used for the top of my benchwork.

 

 

I then fastened the track to the osb with #4 screws, just snug so that the track doesn't float up and down. Overtightening the screws will cause dips in the track and transfer extra noise through the screws.

I have between 3/4" and 1" foam sheets on my train table which greatly deadens the noise.  The width doesn't seem to make much of a difference as long as you don't have wood-to-fastrack contact.  Also, keep in mind sound deadening materials around your train room.  For example, I installed skirts below the train table made of felt fabric which made a huge difference.  Other things to consider is carpeted floors or the foam panel floors (that fight foot fatigue) you can get in some hardware stores.
