What structural method are you going to use? In other words, what are you supporting you "cookie cutter" decking? If you haven't decided yet, let me make my case for L-girder. Its fun to build, very sturdy, uses light weight, less expensive materials, and for us senior guys, can be built with one person and lots of "quick clamps". The thread I'm writing in this section really explains the whole process in fairly fine details. BTW: mine is about 43" high. This lets me easily roll underneath on my scooter to do all the underneath work. If it gets much higher than this I'd need a higher scooter.
