Just wondering when the Central began/ended the process of de-streamlining their J-3a's; was trying to research online but couldn't get a clear answer. I am planning on modeling the Central during the years 1948-1950, would one still catch a streamlined Hudson during this time period?

According to "Know Thy Hudsons", #5426 in ESE streamlining lasted until November 1950, and 5429 may have lasted in streamlined form until June 1949. All the Dreyfus Hudsons seem to have been destreamlined around 1946 or 47.
Your both correct, …..by the early Postwar era, the Central wasn’t exactly a profitable entity. Cost cutting measures became the norm, and shops were looking to not only cut costs, but make servicing the locomotives easier. So out came the “tin snips”. Shroudings in the way of routine maintenance & repairs were simply removed, and not re-installed. Also, by this time period, as the shrouded locomotives came in for rebuild, they’d go ahead and finish removing the shrouding, and unfortunately, scrap it….

Essentially as the Niagaras and then E7s arrived and were deployed on the upper-tier passenger trains.

This is also correct, ….The Niagaras & the diesels bumped the Hudsons down from the Premier varnish, to lessor named & unnamed trains. No need for fancy shrouding on those train sets.
