What would be a good width for a point to point layout? I was thinking two feet wide by either 12 or 16 feet in length and 4 feet in height. I was also leaning toward 3 feet width. Any suggestions or advice would be great. Thanks,

May I suggest you think about 39"? This is about how far we can reach in from the edge of the layout without damaging stuff at the edge of the layout.

3 feet width and as long as you can make it. The 16' becomes small pretty quickly, so as long as you can, if you have any way at all to make it longer. If you can access both sides you could go wider too.
I have loops on a 6'x16'. The 16' seemed like a pretty good size up from what all my temp layouts were previously. When you get everything installed, it shrinks up rapidly. It now seems much smaller. Layout is 40-1/2" high and I can barely reach the center (3'), I am 5'-9" tall. If you are taller or your layout is shorter (or you have a step stool) you can probably reach farther.
The TimeSaver I built is 32x144. One 4x8 sheet of plywood can be cut into three 48x32" pieces.
Abject apologies, I meant to type 32", not 39". We can reach about 30", leaving 2" fpr backdrop, etc.
