Any decent DC variable transformers that you can recommend. I am kind of old school and prefer a handle or lever. Thanks.

How many amps do you need?
Good question. Transformer for DC would predominantly be for lighting LED lit structures, and total amperage would likely be less than 6 I would think, maybe less than 4?
Here are two cheap options I use - depending on the volume of leds you have, either might be options:
1. for workbench, I have a recycled HO power pack. these are all over ebay and also everyplace at train shows.
2. I had a computer die and harvested the DC power supply out of it- many watts and a very stable 5vdc output (among several other voltages). This is the dc bus I use for what you are considering.
Take a postwar transfer like 1033 and hook up a Bridge Rectifier, it will convert the AC to DC. I'd suggest a 6 to 10 amp bridge rectifier like the one below:
Simple hook up, feed AC to the center pins and you'll have DC out on the two outside pins as marked. Now you'll be able vary DC output voltage from an AC transformer of your choosing.
