actually 21st century cattle are much beefier than their recent ancestors.  luckily, most breeds in the US were introduced by the mid 19th century (Holstein, Guernsey, Angus, Jersey, etc), but to be more accurate, they would be somewhat leaner than their modern day counterparts (lunch-counter parts?).

i have a few dozen ERTL Holstein cattle (white with black patches) which i use with a Marx "Happi-Time" farm, but they are Plasticville size (~1:64).  visually, they seem to work.
