OH, you need those 19th century cows for that. They may be hard to find now...in the 21st century. Sorry, I couldn't resist.

Google O scale cows. Usually they have some standing and some lying down. Model Power makes them as well as others.
I think Woodland Scenics or Scenic Express has sets of them.

actually 21st century cattle are much beefier than their recent ancestors. luckily, most breeds in the US were introduced by the mid 19th century (Holstein, Guernsey, Angus, Jersey, etc), but to be more accurate, they would be somewhat leaner than their modern day counterparts (lunch-counter parts?).
i have a few dozen ERTL Holstein cattle (white with black patches) which i use with a Marx "Happi-Time" farm, but they are Plasticville size (~1:64). visually, they seem to work.

Ertl s scale work for 1/48. There o scale may fit lionel.
Plasticville Cows and Horses are a good inexpensive choice. Lionel used their horses on the Civil War set Flat Car.

Thanks for the help so far, I am doing lots of research to find the cows, I saw the Woodland scenic, just out of the budget for this project.
Its actually pretty hard to find realistic CATTLE. And they do not have glossy hides.
