You're talking about the two-tone grey cars (post-World War II), I'm sure.  Except for the 20th Century Limited -- which was dieselized before the 2-tone dark grey with light grey window band scheme began --I believe all of the postwar intercity passenger cars purchased were either Budd Stainless steel or Pullman-Standard stainless steel sheathed.  However some heavyweight coaches, Pullmans and dining/lounge cars (and head-end cars) were repainted two-tone grey, and certainly were used behind steam engines some of the time.  There's plenty of photographic evidence.

One of the real NYC experts will know about lightweight smooth-side cars used in general service behind steam.
