Does anyone have experience with this? I am in northern Virginia and my layout will be in an enclosed porch with an overhead fan. I am wondering if the humidity will affect the Mianne benchwork I just received and if someone in a similar situation has experience to advise me.

Try a search for Mianne, pretty sure there was a thread about painting or staining it within the last few months. May be something in there of value to you?
Do to the type of wood and construction of the Mianne benchwork, it will be unaffected by the humidity. Painting it will not make any difference. Can't say what affect the humidity might have on your choice of table top. My Mianne benchwork has been up and steady for some thirteen years in my New England basement. I do run a dehumidifier more so for the other layout materials as well as electronics.
I had mine in a garage for 5+ years without any problems. The garage was unheated and no AC.
No no need to stain it either.
I used 2" foam for the top and it works great.
