What is a good transformer to use for a large layout using a legacy controller with 2 legacy trains on the same track?

one powerhouse 180 brick.

I'd also suggest using a TPC300/400 or the new Legacy Powermaster. (If you have time to wait for that.)
Note that if the layout grows, and one is not enough, you can add the second one in parallel with a small wiring adaptor.
Layout power is (2) PH 135's, lower left that preceded the PH 180's. Two TPC 400's lower right. All operation is done with a Cab-1 handheld.
Please describe the "small wiring adapter". Assume I know nothing about it.
The Lionel 6-14194 TPC cable set allows you to connect two transformers together. You can also use this with only one transformer, and add a second transformer at a later date. This set comes with the appropriate connectors to power a TPC from one or two Lionel 180W bricks, or almost any power supply source. http://www.lionel.com/Products...neID=&CatalogId=

Lionel part number (6-14194) Adapts (2) molex 18 volt ends from the Power House Transformers to spade adaptors. It is pictured above on the Right TPC.
A little better picture. These two PH180 are connected to the TPC lower left with the adaptor (6-14194). Visible to the lower right of the TPC 400. Thank you, Nicole
Same general type power center as those pictured above. Two 180 watt PoHos linked to a pair of TPC 400s to supply two power districts. Easy to parallel for higher capacity with 135s or the 180s but not needed on my small 9x16 attic layout.
