I am building a room inside a metal building to house my train layout. Building is 30x40’. Train room will be 17x40’. Building will have sprayed on foam insulation . The walls are being framed up with 2x4s. I was planing on using sheet rock for interior walls of train room. Is there a better option than sheet rock? Would you tape/bed and texture walls inside train room? Would you just put on smooth coat of texture material so you could paint walls blue with white clouds. Building will have central heat and air. Other part of building is restroom and workshop. Floor is concrete.

Keep it simple.  As RSJB18 said, use drywall.  Tape and sparkle it.  Prime and paint it.  Then you can do whatever you like to the walls in the way of backdrops.  It's always nice to work with a clean canvas.  

Personally, I prefer to use 5/8" thick drywall.  That extra with inch stiffens the framing up nicely and makes an almost plaster like wall.

If you have never done any taping and sparkling, consider having professionals do it.  That goes for the drywall installation also.  In my area $30.00 per sheet hung, taped and speckled is about the norm.  That doesn't include the cost of material.
