Completely non matching hodgepodge. It would have been a combination of whatever was available (and working), and whatever demand required. Some trains were only 1-3 cars long, while others like the North Coast Hiawatha, would top out at 18.  If you're after the real look, having a completely matched set of only ex-CZ cars would look out of place. Because Rio Grande continued to operate their portion of the CZ route, the CZ didnt return under Amtrak until 1983. In the 70s, they ran a train called the San Francisco Zephyr that ran through Wyoming to avoid the DRGW to SLC. Just google Amtrak Rainbow Era, and you'll see what the right idea is...
