And for those who would like to take the lazy way out, I just received an ad from Jameco Electronics on a device called " LED Buddy".  You simply touch your led to the pads on the device, turn a pot to get your desired brightness, then turn another pot to show what voltage supply you will be using.  It will then show you what resistor to use and voltage drop.

Drawbacks - 1 -it's a kit you must assemble.  If that's not your thing then its ng for you.  2 - you are supposed to touch the led to the pads and then turn the pots for the two items.  I can see that being a little awkward.  I plan on cutting a clip lead in half and soldering each half to the pads.  Then I can simply clip onto the led while I make my pot adjustments.
