Hi folks, newbie tinplate guy here !
I read somewhere here that other guys just bend the coupler up or down to connect a x600 car to a x800 car. Question I have is since I don't want to bend anything, does some one make a coupler tab that sits lower for the 800 to 600. Or one that sits higher going from 600 to 800 ?
If not, then maybe someone should...

The cars are different sizes and not designed to run together. I would just run like cars with like cars.
Some have high couplers & some have low couplers. You shouldn't try to put a car with a high couple together with a low coupler

In actuality the different size cars were never meant to couple together, at one time my Father designed and had the Union Switch and Signal machine shop make a few transition step down coupler pieces for us kids to use. Unfortunately we lost all 5 of them down thru the years. Unless you want to re-adjust them like I do, couple the correct size cars together with each other.
