i would like to convert to all soft glow led lights in a string, rather than individual plugs. Has anyone already done this with any luck?

Most LED strings that I have seen are not easily modified. If you have more time than money, you probably could deconstruct one and space the bulbs where you want them on a fresh lamp cord. Or, use traditional bulb bases and 1 watt LED nightlight bulbs.
The problem with Dept 56 lighting is the metal clip required to secure the bulb socket to the buildings. You can still find Dept 56 multiple socket cords on e-bay that have 3, 6, or 20 sockets per string. The 20 socket sets are somewhat rare.
On my permanent Christmas layout with 60 Dept 56 buildings I replaced the bulbs that were difficult to reach with warm white LED bulbs with bulb bases that fit the C7 Dept 56 sockets. The bulbs are available online or in stores, however, they are not inexpensive.

This is the socket you need to make one string but I'm having a hard time finding them for sale. Most of the C7 sockets with a butterfly clip do not have a pass through style connection.
