We are powering our Gargraves uncouplers with 18V AC and have problems getting car uncouplers to open. Raising the voltages makes the uncouplers coils get hot and we are afraid we'll smoke them. What are methods to make uncouplers work better?

I think I'd ask Gargraves that question, that shouldn't be.
Check out my response to posting titled "Problem With Gargraves Uncoupling Section" on 3/24/13. After reworking the plastic couplers with the metal thumbtacks I used a digital multimeter to measure the uncoupling voltages for various cars, voltages read were between 13 and 15 volts. Also checked AtlasO metal uncouplers, no issues, uncoupling at 13 to 15 volts.
