I am making A hot wire cutter table from scratch. The videos that I have watched say to use A 2 amp power supply. The power supply that I have is 3.3 amp output. Another video I watched showed A on/off dimmer switch being used to control the heat/power would this work for me? Thank you for any information. Choo Choo Kenny

I have the Hot Wire Foam Factory table that I bought from someone really cheap. It came with a 2A wall-wart power supply.
I actually use my 1033 bench transformer for powering it, that gives me adjustability of the voltage and heat. For the thick 2" foam, I turn it up a bit, for the white and light stuff, I run it lower. It works great, and the variable voltage is a real plus.

Burn down the house is about right.
I hope the dimmer switch is going through a transformer, you'll be wanting pretty low voltage on something like this. Certainly no more than around 8-9 volts.

If it's a DC supply, probably not. If it's just a transformer, you might be able to control it, though most dimmers are for resistive loads, not inductive loads.

That's not going to work. The supply will do it's best to maintain it's rated voltage and then drop off.
You need a different P/S, I recommend a small PW transformer. Even a 40-50VA one will do the trick just fine.
