Looking for a recommendation (s) for a SPDT relay that I can use on my PW-style layout to activate signals like the block signal, et.al. I use insulated track sections to activate signals and various accessories so looking for a relay that would work with the insulated track pieces.

I know GRJ is working on these of his own design (and I’m interested )  but in the meantime…

If you're looking for a cheap and/or temporary fix for relays it's hard to beat pulling a bucket full at a local auto-salvage yard.  These are not the optimal choice for 18VAC, but with some kludging they work just fine.  As for the price, I've paid $20 for half of a 5 gallon bucket full of relays at the pull it yourself junk yard once, and nothing on another trip.  Depends who's working, I suppose.  I've also gotten a box full by asking at a local yard to pull them before cars were crushed.  

You get some duds, but most of them work, and you can't beat the price.
