Wiring Lionel Operating Track to use Momentary or Toggle switches

I recently was looking for a simple way to wire the Operating Milk Car Fastrack for my grandson and to be able to control the voltage to at least keep the milk cans from flying across the room. Toggle switches and the rather cheesy Lionel controller needed to go.
