Is it possible to utilize one Legacy control system to operate 2 separate and physically separate track loops?

Can I just hook up 2 sets of wires, i.e. 2 red and black (Power and Ground) pairs from the Transformer and Legacy base to their respective loops?

Will this work?

Either way, it will work and be sure to have a good earth ground at the outlet for the Legacy base power supply. Don't use a surge protected outlet strip.

I always wondered, based on the wiring diagram and also what you are saying...does that mean to connect the Legacy Ground wire to the transformer ground post?

Or actually strip it into the wire along the way?

Yep, using a power strip...I will fix that tonight, thanks for the heads up!

You can attach the Legacy COMMON (U Post) to the Transformer COMMON at the transformer or to where it attaches to the track.  It doesn't matter as long  as it is connected to the COMMON.
