I am running LionChief Plus and one MTH loco. Power goes through the MTH infrared receiver. So I can run one DCS loco and any number of LC+ locos at the same time, with no blocks. Good fun.
The new LionChief remote will be perfect for your three trains.

I got my first LC+ locomotive yesterday, the Phila & Reading Camelback. Pretty nice little locomotive, a lot to like about the LC+ product line.

You can run that MTH infared receiver in passive mode and avoid sending the power through the flimsy PCB. Just connect the outputs to the track and your transformer directly to the track. Don't connect anything to the input power connection.
I do not own any but get to run lots of it after I repair it for Charlie. It is a great running system. I wish our other locomotives had the cruise system LC+ has.
They appear to have borrowed the Legacy flywheel sensor and wheel, so I suspect they basically did a cost-reduced version of the Odyssey II cruise. I know it works very well. My only issue was that Lionel still hasn't mastered the technique of putting fake brake shoes on that don't drag on the traction tires! After I fixed that, it's a smooth running little beast.
Can control the sound volume, has speed control, bells and whistles and crew talk announcements. Uncoupling works great. It's just what I
Want, very easy to use and when visitors come, the each can run their own train.
The layout looks good from what I can see.
To be fair, I could hide my transformers just as easily, the TMCC/Legacy/DCS locomotives all run on constant track power. I have no need to access the transformers or TIU for any normal operation.
Yep, for all conventional, you need lots of levers to control the trains.
