If so...what type of striping are you using; adhesive back, water-slide-off, other?

I use double yellow striping for the centerline on my roads.

I use adhesive backed for the paint stripes on roads, parking lots, etc. I've used it a few times on repaints of locos and rolling stock, too.

Yes, I used the 1/16" pinstriping for road markings as well. Came out looking pretty good if you ask me.

I've used 1/8" pin striping tape on my control panel to indicate track routing. Since it comes in so many different colors, I was able to color code my whole panel for main line tracks, passing sidings, different routes, yards and stations, etc. Works easily, produces a neat, even line and can be removed if I change the track diagram for any reason.

Pinstriping tape works well but I believe the thinnest is 1/16" or 3 scale inches in O.
For thinner stripes you have to use decals or dry transfers.

Chart tape can be purchased at many business supply stores; it too is available in many colors.
I used the tape for my control panels. The tape is on a Formica finish. Some are over 28 years old and no problems.
The front, rear, and sides are all pin stripping.
I haven't used the 1/1 stuff, but make frequent use of detail striping tape from Pactra. It comes in a variety of colors, one roll includes various widths, it lasts a long time and is easy to apply. I use it for diesel sill stripes (first picture below) and for safety stripes on step edges (second picture, steps just below the walkway that are omitted on factory three-rail models):
