Who makes some really good looking couplers to go on observation cars, cabooses, etc where looks are more important the functionality?

Agree. These are, I believe, the same as Clouser and High Sierra.
Scale Craft are almost identical, but in good die cast.
Lionel Scale comes in third, followed closely by Monarch.
And Precision Scale did some credible couplers, probably right on up there in accuracy.
Count me in on the Protocraft couplers for best (scale) looking couplers.
Every observation car and some cabooses get one.
If a engine has the coupler showing and will always be the lead unit, than that will get on also.

Clouser, High Sierra, and Protocraft are indeed, one and the same. The late Bill Clouser marketed them initially. Rights were bought from Clouser's widow by High Sierra's Jim Harper, then sold to Norm Buckhart of Protocraft.

Not exactly correct. Protocraft still sells the Clouser coupler but Norm also had a new version created in Korea. You can buy the Clouser kit (with straight shank having dimples for drilling out to suit the installation) or the new version that comes assembled and fits the new Protocraft draft gear box.
