Wondering what everyone has found to be the best/simplest camera to use for riding on a train for video and sound? I would like record and or stream to iPad

Sparty - are you asking for something that fits on a model train or use in your hand while riding in a real train?
I have been using an AKASO EK7000 PRO. For around $60 it takes decent video and sound. Make sure you have plenty of light otherwise the video will be grainy. I had it streaming to a Samsung pad. Works OK, but not great. I cannot tell if it is the app software or the radio transmitter. Reviews tend to complain about the app. I did not have the loss of signal/connection others reported, but at times there would be a video loss or jumpy video. I mainly use mine for cab ride videos, then download for editing. After adding 40,000 5K light lumens video quality went way up. (4 garage type lights) You will need to add a video card capable of handling the video capture.

I put the camera on a flat car in front of the engine. Inside a car is a different matter.

You might be better off using a camera that records video to an on-board card in the camera as opposed to streaming. There can be signal losses and interruptions when streaming that can ruin an otherwise good video.
For truly GOOD results, I would suggest something like THIS Sony Camera. The under-$100 cameras don't perform all that well, especially in low light.

does anyone have a camera recording while you stream it to a tv or iPad so as you watch the train you also see its perspective from the camera in real time?
Here's a train camera I've recently built.
This latest one is Real time HD that outputs to an HDMI port on your TV. It is extremely simply to operate and broadcasts a crystal clear signal over 100 feet. It doesn't support recording but an inexpensive inline HDMI recording device can be purchased to do that if one want's. I have a write up on this one here: https://ogrforum.com/...5#154307984004363555
