Changing Building/Industry Names to match a certain city, area, or industry.

HI, I am interested in changing the names of buildings to match structures, specifically from Louisville Ky, during the period of the 50's. One of the structures would be a National distillers building for Bourbon, the other would be a hotel, or diner, also maybe change the names of some box cars to haul bourbon barrels. etc.

What i would like to know is how to change the name... tips, techniques, materials, etc.
