When I press thumbwheel to select an engine, display comes up Quickset Speed. How do I turn this function off?

You can’t.
But, I think you will find that it’s a matter of not clicking the button after it’s selected. Click the eng button, close your engine once. When the selected engine name is the main thing displayed, pushing the wheel again enables Quickspeed. Everything else you might want to do is done with another button, or rolling the wheel to change speed.
