from what I have learned there is a number of things that could be a reason that an item gets dropped.
1. not enough pre-orders.
2. electronics did not work out as planed or fit as planed.
3. lionel did not like the molds
4. lionel did not like something else.
and the most likely one, we will never know.

This set was made to run with the Vision Hudson. The 20th Century ran for 36 years with heavyweights. How long did it run with streamline cars?

When was the last time a Sound Station Diner was cataloged and shipped? I really wanted to purchase the Super Chief cars cataloged in 2010, but since Lionel did not offer the SS Diner I decided to pass. I really get a kick out of my UP SS Dinner, for me it adds a lot of fun to running a passenger train. I hope these cars return to the line up.

More than 30 years?
The train actually ran more years with heavyweights than it did with streamline cars. 1902 -1938 were the heavyweight years. Last run was 1967 so 29 years with streamline cars. Lionel did a SS diner in 2004. The number is 15541. Seems odd they would drop it if they still plan to build the other 6 cars.

The vast majority of that "heavyweight" era, the 20th Century was pulled by Pacifics anyway.
Not sure about what best represents the 20th century train. I believe that's simply a matter of opinion or personal choice; But I for one was looking forward to the heavyweight version of the diner.
Whenever I buy a non-streamlined NYC Hudson, (I have the Lionel Dreyfuss), I would love to have the heavyweight cars for it. And even though I think the SS diner is a bit expensive I do have the SP Daylight one and use it to entertain visitors, they think it's cool.
