I'm considering buying a pair of MTH one Guage dash 8s that were released back in 2018 if memory serves me right.
Do they come with an additional set of pilots to create that fixed pilot look ? If they do can you replace the couplers with scale kadee?

Yes, they come with fixed pilots in the box.
Most MTH one gauge allows for KD couplers. The Dash 8s, come with electric couplers installed that have to be removed to install other options. Inside the engine, they just unplug on later releases. On the early ones, they are hard wired.
