I've amassed a small collection of my favorite Postwar steamers in recent months - the 681, 2055, 2025, and 726RR (736). All are terrific runners and have given me a new appreciation for Postwar products.

I am well aware that Postwar locos draw more current than the modern products. I noted on the 726 that there is a decent groove in the rollers and the rollers are a gun-metal gray color. This engine sparks a good bit while running and causes pitting/welds on the center rail.

I've thought about replacing the rollers and I don't think any of my other Postwar locos spark as much as this (although they do spark when moving quickly). I should note that the whistles do spark as well when blown. Track is clean and I've cleaned the rollers and wheels as appropriate. Is there any way to reduce the sparking other than cleaning, which has been done?

You could try cleaning the rollers and their pins with a shot of TV tuner/contact cleaner, which might lead to better connectivity afterward that reduces the temptation to spark.  Else, assuming that the springs that hold the collector against the center rail have "life in them" you probably will need to replace the roller(s).
