Did a quick search and couldn't find the answer. Do these cars play sounds in conventional mode or only on Legacy and/or Command Control layouts?

Yes, the sounds emulate conventionally as well. Now for the control of the ice loading call outs... I am not sure. I will have to pull up the instructions.
Loading and Unloading in Conventional Operation Only
In conventional (transformer-controlled) operation, the short horn or short whistle command
will trigger loading and unloading. Note that locomotive dialog is also triggered by a short horn.
Within the first 15 seconds of stopping, a short horn will play a produce unloading scene. When
stopped for more than 15 seconds, a short horn will trigger a produce loading scene. Icing and
re-icing scenes are not available in conventional operation.
