Friends: I have a DCS Explorer that came with a starter track. I have two additional power bricks from previous sets by MTH. The smaller of the two, the z500, conveniently lists the output as 3A, which I believe makes it safe for my Explorer which lists a 6 A maximum input. What about the larger brick, the z1000. Safe?

The Z1000 brick is a tad less than 6 amps so you should be fine using it for power. Also, I believe the breakers in the Z1000 bricks are 6 amp.
(As an FYI, you have 16 A max in your post (typo?), but the pic of your DCS Explorer says 6A max.)
