Did the Seaboard ever write Seaboard or Seaboard Air Line on the sides of their tenders, or just the number? Were they just happy with S.A.L. RY. on the cab?

Not to my knowledge.
or just the number?
Yes.

Apparently so.
At some point they replaced the name on the cab with the "Through The Heart Of The South" emblem, Railway then Railroad:

I built this from a photo I found in a 1950s era Trains Magazine. Perhaps I did not follow the photo with the lettering - cannot find the prototype photo at the moment. Trains had run a series on various classic steam, and this one captivated me. Not sure SAL ever used Russia Iron or ever did grey boiler jackets, but it is my model and I get to paint it the way I want.
The boiler taper was difficult for some reason - took three attempts to get the conical section in the correct spot per the photograph. I suppose it could use some dummy driver springs (someday).
