Any one know how hard it would be to add whistle steam to the new lionmaster big boy that just came out. I’m on the fence about ordering that model or finding a 6-11208 some where.

VERY DIFFICULT! Don't plan on doing that without a lot of work! First off, since the new LM-BB almost surely uses the RCMC, you'd have to have a custom programmed one to add the whistle steam function, good luck with that. Also, you have to fit the dual cavity smoke unit in, that could be a challenge as well.
I don't see this as a viable upgrade in this case.
I have the 6-11208 Big Boy with whistle steam. It's a great engine and one of my favorites. I also ordered one of the new Lion Chief 2.0 Big Boys. When that arrives I'll see if I have a new favorite. The whistle steam is a cool effect, but I will tell you that the whistle (hole) where the smoke comes out is very close to the smoke stacks and often times when blowing the whistle you don't really see the smoke coming out of the hole because it blends in with the smoke coming out of the smoke stacks. I hope this helps in your decision.
The BB whistle steam isn't as impressive as some other locomotives that have it some distance from the stack.
