I would like to wire this to an AIU port. Can I just run the switch lock-ons on the Barber Shop to the AIU (and power the shop from a power bus under my layout)? Or does the AIU port need power?

Just run the two power wires to a suitable power source. They don't need to go through the AIU and you don't need to use lockons.
Connect the two switch wires to an Accessory Connection (not a Switch Connection) on the AIU.
