MicroMark sells some nice ones. You may want to buy a pack and after that consider using styrene sheet to make your own.

+1 on Ed's comments. Micro-Mark shims are very nice. IIRC, a pack of 60 are about $20
You can use sheet styrene as noted. I believe the Micro-Mark shims are .025 thick, so it's very easy.

I much prefer to make my own Kadee coupler mounting shims. I simply purchase Evergreen styrene at .500" wide in various thickness from around .020" thick all the way up to .250" thick, and use it all over the layout for various other applications as well.
