Most (if not all) 18" passenger cars will negotiate O42.
Insofar as what cars, The ATSF units would be appropriate for any all silver/stainless Santa Fe set. To run them with Amtrak cars, you would need El Capitan Hi-levels, which are 21", as Amtrak leased some Santa Fe F's for the SuperChief/El Capitan, as well as the Texas Chief. Both consists in the Amtrak days used the hi-level coaches.
Amtrak only had a handful of F's, they were used on the Empire Builder. Single level equipment is appropriate and should be a mix of GN, NP, CB&Q, Amtrak and BN cars, with others, such as UP thrown in as well. Domes abound on that train, and it was not uncommon for it to be a LONG train, 16-20 cars.
That k-line product is an extruded aluminum baggage car, there is a whole set of 21 inch "heritage" cars that goes with it. To my recollection, there's a coach (possibly 2), sleeper, diner, dome and dome obs. They tend to not sell for much less than the atlas cars, so you're better off with the much nicer Atlas ex-CZ cars. The buttons are vents on the roof.
