Either roll down the direction/brake/ boost button.

 

Or if this is a legacy engine set your momentum about halway i.e. 5 or 6, get the loco going and then turn the knob " below" the zero seed step and the brakes will grind until the loco comes to a stop or until you turn the throttle back up.

 

This is the way I have all of my legacy engines set, its more realistic.

That's right--also note that throttle controlled brake sound is an optional feature that can be turned on or off. It's called 

V.T.A.B. - Velocity Throttle Auto-Brake. You'll find it under the CTC button. See page 48 in the legacy manual.
