Well, you could take the early morning tour of Disney's rail facilities. I believe you can get the tickets at any of the Disney hotels. I've heard it's pretty interesting and I would do it if/when I get down there.
You might want to ask this question on the main 3 rail forum, a lot more people viewing there.

Watching huge freight trains running right through the CBD is interesting.
The steam locos running at Disney World a really nice with interesting stories behind their saving from boneyards in Mexico.
