I am looking to sell some qsi and mth PS1 electronics that I have aquired over the years. What is the best way to pack some of these boards? Should I invest in some ant- static bags?

Hmm...anti static would be best and they can be stored by the buyer for a time that way. Not sure about storing them in aluminum foil for an extended period.
Do you have a place that builds computers near you? They likely have boxes of used anti static bags laying around they would give you.

Antistatic bags are a dime a dozen, you can get them very cheap. I buy smaller ones in quantity for some of my electronic products, and I get 1,000 for around $5-6.
Aluminum foil is fine, and it's not a problem to store them in that. It's actually the ultimate anti-static material except for initial handling of the item.
Home depot sells anti-static bubblewrap. Its pink. Pack safe and pad in one layer.

Can someone please explain to me why Aluminum foil is good for electronic wrapping? One would think if a person has built up a static charge and wrap a board in aluminum foil, would not that charge be distributed to the board and all electrical components touching aluminum foil are subject to that static charge? What am I missing here?
The aluminum foil conducts the electricity, but it doesn't damage the stuff wrapped in it. If you look at really high end electronic modules, you'll find a lot of them are in a foil wrapping.
