For about a year now, I have been getting almost daily notices from MTH for "uncataloged" new items. Where does one go now to see ALL of these uncataloged items in one place? Surely there has to be a better way than just saving old emails?

To the best of my knowledge, there is no single place or source one can go to see all those items, many or most of which were produced for select MTH dealers. My guess (and it is only a guess) is that you will see no new catalogs from MTH. Your best bet probably is to set up a folder on your computer for "MTH Announcements" and just do a "Save As" to place each of those emails in that folder.
That's what I assumed I'd have to do, and have started doing, printing them to a PDF files stored in a dedicated folder.
Only issue is hashing out a naming + sorting scheme, since descriptions can become unwieldy, and product numbers aren't particularly intuitive.

So this isn't a catalog but rather just a plain list of item numbers for everything that MTH has released for 2021. The list is crude and lacks descriptions of items unless you click on the link for each one to find out what it is. As before, you can tell the difference between Railking & Premier and rolling stock & locomotives by the the numbering convention used.
An easy way as well is to use the MTH Product Locator and select "2021 All Scales" in the Catalog pulldown. Obviously you can narrow it down further, i.e. Premier, RailKing, etc, in the following windows. There are currently nine pages of hits. How soon MTH updates the Locator after making special dealer announcements is a known unknown.

Another way to search in the MTH Product Locator is to select "Uncataloged" in the "Catalog" pulldown and then using a dealer's name as a key word in the "Add a Description" window. Generally, the dealer's name is in the road name title on special orders (see below) and the search will pick up on that. For example, here is the initial output of what Steve Nelson aka Mr. Muffin is listed as doing special. Additionally, with or without using a dealer key word, the higher product numbers are usually the more recent special runs within the uncataloged output.
Another example of "Uncataloged" and using Beth Marshall's Public Delivery Track as the key word.

There is another thread discussing this issue. Sadly I'm not aware of a way to do this even before the MTH downsizing. Atlas had a website section for custom runs.
You can also try the news link on the MTH site. It looks like there is an item there for each email announcement for MTH releases (not the dealer special releases) that has been sent.

That is exactly what I have been doing and it has been working well

Gary - Further to Luther Stanton's comments above, if you go to the MTH website and click on News at the top it will take you to a number of sub-headings, the first of which is 2021 Uncataloged Diesel Announcements. Then if you click on this it pops open and shows a list of various RailKing Diesel engines (in blue), and if you click on any of those blue listings each of the Vendors carrying that type of Diesel engine are shown and the Road Names. Just scroll down below the individual Diesel type and the Vendors will start to roll up before your very eyes. At least, they did for me. 🤔

PS: Just remember - when you call up an individual loco - to KEEP SCROLLING UP beneath the 'enlarged' illustrations on the right hand side of the page, because THAT is where you'll see Diesel Locomotive Offerings by Retailer.
