Will 2 rail cars such as Sunset/3rd Rail heavyweight passenger cars work on Atlas 3 rail track? I know the lighting will not work, all I need to know is if the cars will derail on this track.

Yes.

They will not derail on Atlas solid nickel silver track, however the turnouts could be an issue when making back-up moves. I found that modifying all my turnouts, by adding styrene shims to the tops of all the guard rails (make the guard rails the exact same height as the running rails), solved a lot of switching derailments.
It also helps to have larger curves, i.e. nothing under 072!

I have run my 2 rail cars on Atlas 3 rail track with no problem.
Be aware that very first 2 rail GGD P70 coaches would not run well even on 2 rail track. The wheel profiles were wrong. The problem was fixed by the second run
