Would like to help but please give more detail on what you want to do, such as Transformer used and what kind and how many accessories being run.

How many loops?

How many trains on the loops? What make trains? a Trolley or 6 motored ABA diesel set?

Itemize accessories. There is a big disparity in current draw between a block signal with LEDs and a PW gate man or string of lighted buildings.

Without this information the question can not be intelligently answered.

People with toy train layouts have been using fixed voltage for their accessories for decades. It's not a new concept, nor is it complicated.

You just need a train transformer that has fixed voltage outputs, such as the small 1033, the medium TW and LW, or the large KW and ZW transformers. These are available from many sources, and at many price levels, depending upon condition.

Using several smaller ones and using them only for accessories, you can use the variable outputs and fine-tune the voltages for optimum operation of operating accessories, or getting the lamps in buildings at just the right level.
