I watched "Ultimate Restorations" on PBS the other day about the restoration of the last fish car in America, Mid-Continent Railroad Museum's  Wisconsin Fish Commission Badger No.2. It is a show worth watching if you can find it on your local PBS station. This turned out to be an absolutely beautiful car, inside and out!!! Here is a teaser that I found on YouTube:

This car has been a staple of Mid-Continent's operations - glad to see it back!  Why a fish car, for the State of wisconsin?  Fishing/tourism is a sizeable piece of Wisconsin's economy, so stocking the state's rivers was very valuable. And the railroads had 100's (1000's?) of bridges crossing rivers, so they would stop the car on a bridge and discharge a batch of fish, from the holding tanks in the car.

Perhaps another less heralded piece of fishing and hunting lore is that the Syndicate maintained brothels in the north country for the entertainment of the "sportsmen"!
