The real one tended to change from 8 chuffs per revolution to 6, to 4 then back through 6 to 8. Since the 4-6-6-4 Challenger type is a 4 cylinder, simple articulated design, each of the two engines have 4 chuffs per revolution. The MTH Premier models of the Challenger seem to duplicate the in-and-out of sync of the exhausts pretty well.
The articulated ERR RailSounds Commander does a decent job as well.
FYI, the chuff switch feeds the RailSounds with four chuffs, the extra chuffs are generated internally by the sound board.

Which disappears at higher speeds/rpm, as does the separate "chuff" of any reciprocating engine of any kind (gas, diesel, steam). A steamer at 60 mph essentially just has a roar, like your automobile would with no muffler. (OK, a 4+ cylinder roar is smoother than a 2-cylinder roar, but there's no chug either way.)
