I'm restoring a 226E Thinking about converting it to postwar trucks and couplers. But I'm not sure the best way to go about it with parts and fittings

How bad is the condition of the tender? One option would be to look for a junk orphan postwar 2426W, which is essentially the same tender but with postwar trucks and a knuckle coupler. It might cost you less in the long run.
Tender is in excellent cosmetic shape whistle needs work
The shells are the same between the 2426 and 2226W. 2426 trucks and drawbars can be found. Depending on your budget. You can change out the trucks and draw bar, but there is one thing that may conflict.
2426 shell ID
2226W Shell ID, same shell for both.
Comparing the 2426 and 2226w 2426 on the left in pictures. The trucks/wheels make the 2226W taller.
The front. If only going to use with a 226 Engine, keep the draw bar for the 2226W.
The rear, this is where the conflict is. The 2226W has a sheetmetal lip on the frame the 2426 does not.
You may have to cut the lip off if the coupler drags. Cover your ears as all the "keep it original" collectors scream when you do so.
What if you want to run multiple Postwar tenders on a 226E? I was able to use a 746 draw bar with a little modification to some bends on the 226E. Be warned it may not swing enough for 027 or even O31. Depends on the tender and length of the tenders draw bar. The 746 does not have anything to stop the draw bar swing as the 226E does.
There are coupler adapters to get the Prewar couplers to work with postwar also. Some are in the 3D catalog.
The 2226W prewar whistle not working? If it is the metal whistle body , I replace them with a PW whistle. The ones with the brass bushing for the armature shaft on the brush plate like this one.
My 2 cents on the issues.

The tender and frame are in excellent condition So I'd like them But I ordered a pair of 6 wheel tender trucks But the bolster is too low and connecting to the frame is a problem Don't how to fix that.
