Does anyone know of any good sources for items such as window covers/visors, fan screens, air hoses, chains etc... that can be used to detail out the locomotives?

Try P & D Hobbyshop. Google should get you to their extensive website.
Precision Scale Co. (PSC) for short has all of what you are looking for. Their website has the drawings s now listed. Note there is a $30.00 min for purchase.
Also Des Plains Hobbies had the former Bob Rzaza o scale details-now OSA( O Scale America). Unfortunately their website does NOT have pics of the details. Former P&D hobby catalogs from the 1980's to the 1990's would show illustration of those detailed parts.
Bowser of PA has 2 or 3 lines of detail parts. Not all Locomotive so you need to look around their site.
Atlas models also sells parts. Not a real friendly site, but I added some window shades, and coupler cover to my SW's, I've also repaired hand rails and added lighting. You can do a lot with a paint brush and decals.

As always, eBay is the place to start (not that you shouldn't try Precision Scale, etc., too).
eBay sellers put individual pieces or entire "grab bags" of detail parts up for sale. Prices vary wildly, of course. Besides searching under the particular item's name, searching under "brass" (in title only; often too much irrelevant stuff otherwise) will often yield such items, as so many detail parts are and were made of this common hobby material. Then just cruise up and down.
Stevenson Preservation Lines is a great source for steam parts. I've bought several. There's a website.
Yes but the only issue d500 is you get a lot of not needed parts with those lots. If you have a specific job, PSC, Des Plains hobbies is the way to go!
