Can:t find any local hardware stores that carry them so plan to order on Ebay where they seem readily available. What diameter to order? Any specifics to avoid?

I buy Tiki torch wick replacements at Lowes or Home Depot and use that material. Works fine and is a fraction of the cost of the "real" thing.

Part # 8141-56 fiberglass wick looks like wire insulation sleeving to me. The last time I purchased anything like it, it was an assortment of sleeving from an electronics shop. I don't know where you would find it locally today.
The train tender gets 12 cents each for this part when they are purchased by the dozen or 20 cents each.
I don't get much call for it, so I just buy mine from Train Tender.
I measured the wick that came in a liquid smoke unit conversion kit. The measurement is not exact. These sleeves can usually be stretched, causing the diameter to reduce (like a chinese finger trap).
An 11/64 drill bit just fit into the sleeve, length 3/4 inch.

I am going try that!
The first thing I do to any smoke unit is cut off that stupid sleeve! I've never seen that work as well as simply packing the chamber with fiberglass wick and having it wedged firmly under the resistor with the top exposed. That gets me lots more smoke than the way they came from the factory.
Cut off the sleeve and use Tiki Torch wick.
