You might try the OGR SEARCH function, as such protection has been discussed many, MANY times.

Look on 'the bay'.. Modern circuit breakers and TVS diodes.. Also look on Dallee Electonics website.. (OGR Magazine advertiser) Of course do what Hot Water suggested!! Some of the older links may not work...
It looks like you are looking for Transient Voltage Suppression for over-voltage spikes to protect your electronics, rather than over-current protection like breakers or fuses to protect the transformer.
My "go to" part for a TVS for O-gauge trains is the 1500W 33.3V TVS at Digikey. Connect it directly across the transformer track feed.
I use PTC polyfuses/polyswitches on my track feeders for overcurrent protection. They stop the show quick if you size them correctly. They are cheap and self resetting, and I you use a terminal block then it's easy to switch them out for different loads.
