Watching some big locomotives dip and sway going down some leads I just put down, and thinking "hey, that looks just like going through a poorly maintained engine yard",

I'm wondering if any of us do this on purpose, perhaps to make a little used siding look "real"?

You have to be careful doing dramatic vertical curves in model railroad track because only the best cars and locos have fully sprung and equalized wheels that will do a better job of negotiating uneven track. It could be an interesting visual effect but most of us are more concerned about reliable tracking.
